red stuff guajillo, white stuff garlic & baby onions, green stuff grape leaves (all home-grown)

tried SandorKraut‘s diy “airlock” method of saline baggie weight … not happy with mouldy results

able to rescue this batch: stored in home made fruit vinegar in fridge, and use in anything calling for garlic (delicious, definitely different flavour profile)

guajillo’s spice intensified tremendously during fermentation (gonna try a pepper mash this coming pepper season, woot!)

got a new batch of just garlic on the go in DIY fermentation vessel in basement (after a week fermenting in kitchen to get it going)
